Tongue cancer and cooking for the family

Since I had surgery for tongue cancer I find that I'm still able to cook for my family without tasting. Kinda like Beethoven being able to play music even though he lost his hearing. 

I can look at, smell is ohh so important to me and I just remember how much of each ingredient after cooking for 50 plus years. It amazes me.  The families happy and I can still do what I love; cooking for my family.

I'm looking forward to eventually being able to eat it soon.

A trip to Juliette's home in Savannah yesterday was very nice.  Most of the furnishing actually belonged to the family and the house is top notch. It was a great day trip.  She was a very accomplished artist and there are many fantastic pieces that she painted and sculpted in the residence.  Any Girl Scout or former Scout will be totally enthralled

It's that time of the year for the amazing Pumpkin Spice Latte but you don't have to hand over $5.50 for one at Starbucks or Dunkin Donots.  If you are one that misses it when the season is over now you can have it all year round. You won't have to worry that the coffee shop is going to be out of the base either. 

If anyone had ever told me I would pay that for a doctored cup of coffee I would have thought they were out of their mind but I have and I do probably like the rest of you have. 

Well I didn't feel like getting dressed, driving to town to get my fix so I made this with sweet potato baby food and the items below.  Don't be AFRAID of the sweet potato baby food. You REALLY can't tell the difference and it is FANTASTIC and you don't have waste like you do with whole can of pumpkin.

If you have a can of pumpkin purée open even better but why waste a whole can for 2.5 Tablespoons and I think it tastes the same. Let me know what you think 

This makes two just bring to simmer and enjoy with your significant other 

Here's the recipe 
4 Tablespoons Turbanado sugar or brown sugar or regular sugar. I like the first two 

2.5 tablespoons sweet potato purée or pumpkin purée 


1/4 tablespoon of each 
Nutmeg fresh grated
Ginger
Cinnamon

2 1/4 cups milk of your choice 

1 tablespoon vanilla 

1/4 cup espresso or strong strong coffee

Thanks for your patience. I'm back

To all my loyal readers I've finished my treatment for tongue cancer five weeks ago. It's been a long road but now to get on with life.  

My husband and I are planning our next adventure and hope you'll join us. 

We're planning to take the Disney cruise out if Port Canaveral Florida. 

I know other older travelers are asking WHY!   It's time to explore and were always open to new adventures. All of our kids are grown but we have an eight year old granddaughter that was promised the Disney experience when her father came home from Afghanistan and the family is going to meet and do it! 

Being senior citizens I want to open your eyes and we'll share the fun with you. You don't have to have young ones to go for it 

We have three Yorkers and our miniature dachshund  so logistics with the puppies is going to be an issue with the whole family going.  We've decided we will take the dogs with us to Disney and drop them at the doggie boarding there. They will enjoy a villa and we will be cruising with no worries.

Crocs has outstanding customer service and warranty

I had the pleasure of being the valued customer of crocs outstanding service. 

I had an issue with my shoes and crocs took care of it. Today the replacement came in the mail. Thank you for such great care and attention to me a customer. 

The company was wonderful and I didn't miss a step. Fantastic to do business with.

BEWARE of purchasing watches on board cruise ships

We just came back from a cruise and I purchased an S. Coifman watch for my husband for his birthday. They showed an msrp if $1,795 and on sale for $421 and no tax. I checked when we got home and the msrp is correct but I could have purchased on line for $538 with no tax.  That's not as bad as the watch my husband bought me. It is an Invicta with an Msrp of $695 and it was on sale for $109.  I just went on line and I could but it for $41.00. My advise if you're considering any major purchases know what you're looking for before your trip and check prices to ensure you don't make a spur if the moment purchase you'll regret.

  Well the Carnival Dream may be newer than the Carnival Fantasy out if Charleston but I would recommend the Fantasy over the Dream. It appears the crew on on the Dream were new, untrained and lacked interest in the passengers. The food was cold every day, every meal except for one morning after we mentioned it to the super odor. Definitely an issue. 

The folks cleaning the cabins tell you when they will be there to clean not doing it st your convenience. 

There are double the passengers of the Fantasy and it shows when you are looking for a deck chair. None to be had and removing items after 40 minutes of absence doesn't happen. If you're considering the Dream look elsewhere. 

We did find a FANTISTIC parking service, Park and Cruise. FAST, cheap service. We purchased online and saved a dollsr a day, just $6.99 instead of $7.99 and a lot less than the port at $15.00 per day. Easy to find, fast to load luggage and passengers and they had plenty if vans waiting at 7:00 am when we arrived after the cruise. We were on the road by 7:30 am. Definitely s gold star for service and price. Don't forget this one just a mile 1 1/2 miles from terminal. 


I would love to vacation at this great property in Nassau just meters from Atlantis

Travel insurance do you need it?

We're leaving Saturday and checked this morning to see if we could purchase in case of medical issues while traveling. There is a cutoff point that you are no longer eligible for coverage. On Carnival Cruise lines it would have cost $65 per person for coverage resulting from ill was or covers illness during travel. 

Don't expect your credit card company to cover missed cruises or flight cancellations. Most definitely don't cover illness while traveling either 

We booked our cruise three weeks ago never thinking any issues would result but things change. You need to determine if your investment and circumstance warrant the risk.  Also before purchasing trip insurance be sure to choose a company that is one of the top ranked ones. Here is my list if favorites. I have worked with Travel Guard for years and their coverage is Excellent. They have a web site that makes it easy to purchase as well as 24/7 service. Check rates and compare coverage. Also call them and ask questions specific to your situation to ensure great coverage and the most protection for your individual circumstances. 

Square Mouth is another top rates company as is insure my trip. Do some research before you decide to buy and definitely ask questions to ensure if you need it you have the protection you thought you purchased.

Planning that European getaway

If you're continuing the process of planning you're European getaway an absolute must have is your passport. Don't procrastinate on this. If you have one be sure to check the expiration date. Many countries require you have six months remaining to even travel. We had friends who reported to the airport for their honeymoon trip that morning and weren't allowed to travel because the bride only had 4 months remaining on her passport. Don't throw a monkey wrench in your travel plans. NO SURPRISES, is my motto. Start hunting up your birth certificate now and be sure its a certified copy. There may be a time delay and additional expense if you need to send away for this too 

There is an avalanche if applications in early spring and summer so while you're snowed in is a good time to start the process 

If you're renewing a passport like we recently did you can put more than one renewal in an envelope but new applications can only contain one. Be sure to read all the directions with your application and if you have any questions we found our postmaster knew where to get answers to our questions.

Super Bowl Sunday Weight Watcher Bonanza

Just because it's Super Bowl Sunday doesn't mean you have to go down the dark FAT FOOD path!  

We're having family over and I've made all waist line friendly things. Blueberry banana bread made with frozen blueberries and a couple of ripe bananas.

 I hadn't thought if dessert until I saw Giada on the Food Network this morning making it. I put it in my oven beside the potatoes I'm baking that I'll scoop out and fill with 93% lean sloppy joes I made from scratch. We are also having 7 layer taco salad made with Oikos cucumber yogurt dip, 

Bush's  Black Bean Fiesta grillin beans and fresh tomatoes lettuce and low fat cheese. And of course grilled and smoked chicken tenders and wings with skin removed. The whole party cost less than $15. BONANZA!

I'm saving my points for our cruise

Plan before you leave for Europe

You've decided to go to Europe. Now what?  Planning on how to get around is something you need to decide before you go anywhere. Of course you have an idea on how you want to get across the pond, hopefully. Repositioning cruises are a money saving way; travel and good included but you might not have 14 days for the crossing unless you're retired or have saved ups ton of vacation time you want to dump.  Flying in is probably what 95% of folks will choose. Search for that great airfare.   

Planning on how you will get around once your feet are on the ground can be perplexing as well. My favorite is Eurail. There are so many ticketing options but be sure, if you choose this option, you should purchase before leaving for  Europe. 

When we went on our last family trip we used Eurail and traveled from Frankfurt to Heidelburg on to Paris to Barcelona, back into France to Monaco, back to Paris, Heidelberg  and finally back to Frankfurt, all with a 10 day pass. What a bargain. You can see a lot thus way and not bust the budget.

Planning a trip to Europe?

The best advice I can give you, the same I would give our kids; travel light. I mean don't learn the hard way like we did.  You don't need to pack a suite case with 70 pounds of food. They do have it there. Our first trip this is what we did and ended up donating it to the food pantry on base but not before we hauled it to 3 countries with our Eurarail pass. Not fun getting on and off the trains with luggage overload. 

If you're planning a trip and are using mass transit take a backpack and only take the absolute minimum. If we're going for a month I would pick our the oldest underwear and plan on throwing them away before flying home. 5 sets are plenty. Socks too.  Then a nice pair of slacks, two changes of clothes and plan on washing them out.  If you need to purchase something during your trip toss what is worn out to make room fir the new. 

Don't take hair dryers etc as they weigh too much and you can do a lot without it 

Plan ahead, travel light and you will have less stress. By traveling light you won't have to stash your luggage in a terminal locker or at the hotel will call. You will always have everything with you so no backtracking to retrieve it. 

Also forget the luggage on wheels as they soon deteriorate on the pavement and soon become a loss. If you're just going from the airport to you're hotel and back they are wonderful if they have the multidirectional wheels but o. Cement they will be toast in short order. 

We are leaving shortly for a trip to the Virgin Islands so will try to pack light

Sochi Olympics. Are Americans safe?

For those lucky enough to be going to Sochi security is tight. The State Department has issued a warning for  American's traveling in Russia. 

There is another terrorist threat, a real one fir the Olympic Village and against Americans.   A world wild threat has been made by Al Quaida threatening to avenge death of their members. 

Outside the ring of Steel, the Olympic Village and surrounding grounds. The has sent the FBI and other resources to aid in helping the Russian Government to secure the games. To date they have declined our assistance. 

10,000-15,000 Americans will be at the games and everything is being done to keep them safe. If you're traveling to the games our government is advising don't wear anything away from the venue that could identify you as an American 

The games are a time honored tradition that should be safe for all

How to be a great long distance dad when you're deployed.

Our son is currently deployed and I consider him to be a wonderful dad even though he's across the world in an isolated environment.  Being a military wife of a Navy guy that served 30 years in the Navy I know how important and how difficult it can be to communicate with your family.


During the Vietnam Era when my husband was deployed there wasn't the internet or Skype to help keep the family woven together.  Now our son Skype's our granddaughter and his wife and it's comforting to know that they can still communicate.  Hopefully this will aid military families in keeping the family strong during deployments.


The highlight of our year was our Skype with our son on Christmas Day and we're looking forward to our birthday calls as the day approaches.


God bless our soldiers and with communications being key to a strong family and peace of mind during deployments you have to look at the internet as a good thing.


To all those that are deployed and their families know we hold you close in our hearts and that you are always in our prayers.

Carnival lawsuit by homeowners in Charleston

Mayor Joe Davis said he was happy with the higher correct dropping the lawsuit. Whoop Hooo Carnival will stay for now. They State Port Authority is moving forward with the new terminal. 

We won't have to drive to Florida to catch a cruise in the future. 

We did cruise put of Charleston twice and they've bent over backwards to ensure they don't disturb the residents with noise. Their silent debarkation is so efficient with no announcements over the PA to ruffle locals. 

Justice had been done. Move on!  I'm sure it won't be the last we hear of this as a handful if locals are still threatening another lawsuit.

National popcorn day today! OH YEAH! A fantastic recipe too

One of my favorite food groups, POPCORN!  Imagine the possibilities.  Jalapeño, cupcake, snickerdoodles,  you are only limited by your imagination. My favorite still is Carmel corn.  Yep, plain ole carmelcorn. 

Whenever were traveling and I see it I have to grab a bag. It's a great travel snack as it doesn't need To be refrigerated and it keeps for a week or more. Through all our travels I have to say the WORLDS best carmelcorn come from nuts on Clark. We found it the first time during a layover at Chicago O'hare. It's located in terminal 1 & 3. This is a must have trigger food for me. You can also order your fix online at nutsonclark.com.  They have many different flavored packed and ready to grab and go. The first time I purchased it I got the small snack bag. Well it was gone before our flight landed in San Francisco and I had no way to get a refill. The sad thing was we weren't flying through O'hare on the way home so it was another five months before we could have our daughter bring more and info on where to order by mail.

For those that don't live in Chicago here's a great carmelcorn recipe that I got from a microwave demo dated December 19, 1981. It is wonderful and its all made in the microwave so great for   and college students too. 

Microwave Carmel popcorn recipe
(Ye Olde Van Buskirk Recipe)

I was at the base exchange and the lady was just finishing up her demo and have me the recipe. It's made it's way into my cookbook, Eating our way duty station to duty station. 

Ingredients
5 Tablespoons butter
1/2 cup brown sugar
3 Tablespoons corn syrup (light)
1/4 teaspoons salt
1/4 teaspoons vanilla
1/8 teaspoon baking soda 
1 batch popped corn ( I use one bag of microwave popcorn without butter- plain)
Mixed nuts or peanuts are optional but a must for me. Add as many as you want 

Directions
1.  Make batch of popcorn
2.  In a large mixing bowl combine butter, salt, brown sugar, corn syrup and vanilla
3.  Cook at full power in microwave for 2-
      3 minutes. Mixture should be bubbly hot. Add baking soda. The mixture will foam and a lighter color. 
4.  Mix in popcorn and stir well. ( I have to add mixed nuts or just some jumbo peanuts as I love the cracker jack addition).  Pour out onto aluminum foil or silpat and cool. Break into pieces.

We've seen him for years and marvel at his dedication. He's on the bridge today battling the 48 degree weather here. I know that's not cold in the Midwest but here it's FREEZING.  

The Charleston Food and Wine Festival 2014-Don't miss it!

This is one of my favorite events of the year here in Charleston, South Carolina, and there are so many to choose from but this is tops.  It was rated as one of the top five food and wine festivals in America by Forbes Traveler.  It is a massive event with guest chefs from around the country.


I had the please of working as prep chef for Bobby Flay when he attended.  The Culinary Institute of Charleston made it possible.  I was a Pastry and Bake Shop major and was chosen to help with the event.  A truly once in a life time experience.  Bobby was such a pleasure to work with and thanked staff at the end of the event.  Not all the chefs did, but he made a point to come back to the work areas and thank each person individually.


Spring is a wonderful time in Charleston so hope to see you there.
